Quinoa is an amazing whole grain that contains all 9 of the essential amino acids, making it one of the best vegan protein sources available.
Pair it with tofu and a rainbow of veggies in this yummy wrap and experience the burst of flavor and nutrition packed into every bite!
I find that using Swiss chard or collard green leaves for the wrap (instead of butter lettuce or romaine hearts) makes it much sturdier and less likely to fall apart.
