1/2 cup quinoa*
1/2 cup tofu, cubed
1/3 cup bell peppers, diced
1/8 cup cilantro
2 Swiss chard leaves (or collard green leaves)
any extra veggies you want to throw into the wrap
salt and pepper, to taste
*I like to prepare a big batch of quinoa at the beginning of the week with garlic and onions to enhance the flavor of the quinoa
1. Place quinoa, tofu, and veggies (in that order) as close as possible to the spines of the chard leaves, leaving enough room at the top and sides of the leaves to wrap them up.
2. Wrap and enjoy!
