Equipment you'll need: high-speed blender (optional), large mixing bowl, cookie sheet
1 cup unsweetened applesauce
1 cup quick oats
1/2 cup white whole wheat flour
1 cup stevia
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp liquid stevia
1/4 cup raisins
1. Preheat oven to, line cookie sheet with parchment paper or spray with non-stick cooking spray, and set aside.
2. Combine all ingredients except raisins in high-speed blender, and blend until smooth. (Alternatively, combine all ingredients in mixing bowl, and mix until thoroughly combined - this will yield a cooke that has full oat pieces in it unlike what is pictured - still delicious, though! Then, skip to step 4.).
3. Transfer blended batter to mixing bowl, add raisins, and stir.
4. Scoop 1.5-2 Tbsp of batter onto baking sheet, flatten with the palm of your hand, and bake for 10 minutes.
Note: these taste sweeter/better the second day!
