I was pretty excited about this because oatmeal raisin cookies have always been one of my faves. Also, who doesn't want an excuse to make cookies?!
Anyway, I hopped into the kitchen and started experimenting until I developed the most perfect, low-calorie, oil-free, sugar-free oatmeal raisin cookie that ever lived... and here they are!
If you like this recipe, you might also like my Skinny Chocolate Chip Cookies (another one of my all-time faves) or my Low-Carb Peanut Butter Cookies (these are also one of my faves... I think I just love all cookies)!
By the way, I'm always open to suggestions, so feel free to shoot me an email anytime if there's something you'd like to see me veganize/healthify!
Cost per serving: $0.24
Calories per serving: 62
Equipment you'll need: high-speed blender (optional), large mixing bowl, cookie sheet
1 cup unsweetened applesauce
1 cup gluten-free quick oats
1/2 cup white whole wheat flour (or gluten-free all purpose flour for a gluten-free version!)
1 cup Lakanto Monk Fruit Sweetener (use discount code "Annie" for 20% off!)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup raisins
1. Preheat oven to 350F, line cookie sheet with parchment paper or spray with non-stick cooking spray, and set aside.
2. Combine all ingredients except raisins in high-speed blender, and blend until smooth. (Alternatively, combine all ingredients in mixing bowl, and mix until thoroughly combined - this will yield a cooke that has full oat pieces in it unlike what is pictured - still delicious, though! Then, skip to step 4.).
3. Transfer blended batter to mixing bowl, add raisins, and stir.
4. Scoop 1.5-2 Tbsp of batter onto baking sheet, flatten with the palm of your hand, and bake for 10 minutes.
