Overnight oats are my new favorite breakfast - they are so convenient!! All you do is mix everything together in a jar, store overnight, and your breakfast is ready to go as soon as you wake up. Can't get much easier than that! I've been using Silk Light Soymilk because it is a good source of plant-based protein, an excellent source of Vitamin D and Calcium, and low in saturated fat. It's also super yummy! I love being able to get a big dose of protein, vitamins, and minerals in my breakfast to set me up for a great day, and this is the perfect recipe.

Equipment you'll need: mason jar or other air-tight container
½ cup Silk Light Soymilk (or other non-dairy milk)
¼ cup water
¾ cup gluten-free oats
dash of cinnamon
4-6 drops liquid stevia (optional)
optional toppings: berries, shredded coconut, nuts
1. Combine all ingredients in a mason jar or other air-tight container, and stir to thoroughly combine.
2. Store in refrigerator overnight.
