Equipment you'll need: blender, muffin tin
1/2 cup applesauce
1.5 cups pears (frozen or fresh, chopped)
1 tsp vanilla extract
1/2 cup oats
1/2 cup white whole wheat flour
3/4 cup stevia
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1. Preheat oven to 350, spray muffin tin with non-stick spray (or line with muffin tin liners), and set aside.
2. Combine all ingredients in the order listed in blender, and blend until smooth.
3. Scoop batter into muffin tin, filling about half to 3/4 full.
4. Bake for 22-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
