I loooove me some salsa and 'tis the season! Last week, my fiancé and I had such a fun date at a local Austin restaurant called Güero's Taco Bar.
It's a cute, classic Austin Tex Mex restaurant that is about 7 minutes from my home.
A lively and fun atmosphere with a great happy hour, tons of vegan/gluten-free options, and a self-serve salsa bar (aka unlimited salsa, aka heaven).
The food is amazing, and it is such a perfect place for for vegans/non-vegans/clean eaters/not-so-clean eaters to enjoy some scrumptious classic Tex Mex food together! Pics below 🙂
Recently I've been doing a lot of dining out and sharing on my Instagram so that y'all can see how easy (and delicious) it can be to go out to eat with friends and family even if you have dietary restrictions!
It's a huge misconception that we (vegans and/or gluten-free eaters and/or clean-eaters and/or oil-free eaters and/or those of us on a special diet of some sort) cannot go out to (normal) restaurants and enjoy meals with our loved ones like we used to - but we TOTALLY can.

I always share exactly what I order and how I tweak certain menu items to make sure I get exactly what I want when dining out!
Ok anyway, after leaving Güero's I realized that I should definitely make salsa at home because 1) I never have 2) After my 5th round I realized that I might have an obsession and 3) why the heck not?!
So, that's how this Simple Homemade Salsa was born! It's super easy to throw together and makes a HUMONGOUS batch.
This Simple Homemade Salsa is vegan, keto, gluten-free, added-sugar-free and is jam-packed with veggie nutrition! Who doesn't love a lil' salsa on top? I sure do!

Equipment you'll need: chopper (optional, but it's my new favorite kitchen tool)
Ingredients: makes 8 servings (1/2 cup per serving)
1 can (15 ounces) diced tomatoes, drained
1 medium onion, chopped
2 cloves garlic, minced
1 jalapeño, chopped (remove seeds to make it less spicy!)
1/4 cup cilantro, chopped
juice of 1 lime
salt, to taste
Method:
1. Chop all veggies, and combine in mixing bowl! (This chopper has changed my life!!!)

- 1 can (15 oz.) diced tomatoes, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 jalapeño, chopped
- 1/4 cup cilantro, chopped
- juice of 1 lime
- salt, to taste
