How do you feel about beets? Most people either love them or despise them. I happen to be someone who LOVES them. I cannot get enough... Seriously. My dog likes them too! She will even eat them raw - a little intense for me. Anyway, this is less of a recipe and more of a "how to steam beets" post. They are so simple to make and a perfect addition to any meal (if your crowd happens to fall under the "beet lover" category, that is!). Enjoy!Cost per serving: $1.17

Ingredients: makes 2 servings
4 medium beets, washed and cut into quarters

Method:
1. Fill a stockpot with about 2 inches of water, cover, and bring to a boil.
2. Add quartered beets to steamer basket, and steam for 15 minutes. They are ready when you can easily insert a fork into them. If they are not finished, steam for 5 more minutes and check again. Repeat this process until they are cooked!
3. Remove beets from heat, and peel once cooled if desired. (I never do this step, but feel free!)
