Equipment you'll need: high-speed blender, large mixing bowl
Ingredients: makes 12 quiche cups
1 block extra firm tofu (14 oz)
3 Tbsp water
1 Tbsp ketchup
2 Tbsp Dijon mustard
1 Tbsp lemon juice
1 Tbsp cornstarch
1/2 cup nutritional yeast
2 tsp Tastefully Simple Garlic Seasoning
3.5 cups leafy greens of choice*
*I used frozen spinach and thawed it first
Method:
- Preheat oven to 350F, line muffin tin with non-stick muffin liners or spray with non-stick cooking spray, and set aside.
- Combine all ingredients except leafy greens in blender, and blend until smooth. Add more water if necessary to facilitate blending.
- Pour contents of blender into large mixing bowl, add leafy greens, and stir.
- Spoon into muffin tin.
- Bake for 30-35 minutes, or until edges begin to brown.

Vegan food does not have to be boring. This Vegan Quiche was absolutely delicious. Even my husband thought so and he is a picky eater. The only change that I made was adding some diced onion. Thank you for sharing the recipe, Annie. I will make this again and even serve it to my non-Vegan friends.

Hello Annie! Just found your lovely website. Very tempted by the mini quiche cups, but unable to obtain the garlic seasoning being in the UK - even through Amazon. Would general garlic salt/powder be ok or could you recommend an alternative. I think I will be cooking a lot of your recipes so please keep developing them! Thank you. My tofu comes in 16 Oz pkgs. There are 2 blocks in a package. Do I use both blocks? And what size frozen spinach do you use? Recipe looks great!

Hi Melissa! I would use both blocks if the total is 16 ounces for both. I used 3.5 cups from a 1-lb bag of frozen spinach.
