This Vegan Blueberry Banana Bread is SO DELISH! It is oil-free, low-fat, dairy-free, egg-free, gluten-free optional, and contains no added sugar. Super easy to make, too!
This is another idea that I came up with after someone on my Facebook page suggested that I make a recipe with blueberries!
I loooove blueberries and was in the mood for banana bread, so I figured combing the two couldn't possibly turn out badly.
I was definitely right!
This Vegan Blueberry Banana Bread is super delicious and actually quite filling.
I've been enjoying them it for breakfast every day!
It's pretty darn beautiful, too!

Equipment you'll need: large mixing bowl, 8x8 baking pan
Ingredients: makes 9 servings
1 cup white whole wheat flour (or gluten-free all purpose flour)
1 cup all purpose flour
3/4 cup granulated Lakanto Monk Fruit Sweetener* (use coupon code ANNIE for 20% off!)
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 bananas, mashed or pureed
1/3 cup water**
2 Tbsp lemon juice
1/2 cup blueberries
*Or other granulated sweetener of choice, equivalent to 3/4 cup sugar
**Note: One reader commented that she need more liquid to make the dough - if that is the case for you, add more water one tablespoon at a time.
Method:
- Preheat oven to 350F, spray 8x8 baking pan with non-stick cooking spray, and set aside.
- In a large mixing bowl, combine flours, granulated sweetener, baking powder, baking soda, and salt. Whisk until thoroughly combined.
- Add in mashed banana, water, and lemon juice, and stir.
- Add blueberries, and stir again.
- Pour batter into baking pan, and bake for 30 minutes.
