Equipment you'll need: small mixing bowl, high-speed blender
Ingredients: makes 12 muffins
Dry Ingredients:
2 cups gluten-free quick oats
1.5 tsp baking powder
2 tsp cinnamon
1/2 tsp salt

Wet Ingredients:
1 package House Foods Organic Tofu, firm (14 oz)
1 tsp vanilla extract
1/2 tsp liquid stevia extract
1/2 cup applesauce
1/2 cup water*
*Or other granulated sweetener equivalent to 1 cup of sugar
Method:
- Preheat oven to 350 F, line muffin tin with non-stick muffin liners or spray with non-stick cooking spray, and set aside.
- Add all dry ingredients to high-speed blender, and blend until mixed well.
- Add in wet ingredients, and blend until smooth.
- Spoon batter into muffin tin.
- Bake for 30 minutes.

Hello I’m trying to find a go to moist muffin or cookie and maybe this is it??? Questions- did u have to press the tofu and also why not use semi firm tofu?

Hi Kat! Yes, these are moist and delicious! I just drained the tofu but didn't press it. I'm guessing it would work with semi-firm, but you might have to add less water.
