I'm sure I've told you about my mom before... but she is a total rockstar of a woman.
She is a renowned cardiologist at Mayo Clinic and is the most productive woman I know.
I look up to her in so many ways, but what I truly admire most about her is her ceaseless love, compassion, and complete kindness towards others.
She has a heart of gold and has a quality about her that makes everyone she meets want to talk to her.
Oh yeah, she is also so FUNNY! She is always making me laugh.
Like, those REAL, belly laughs where you just can't stop.
She warms my heart.
She is my best friend.
She is my shoulder to cry on and the lady who knows everything. I turn to her for guidance on the most minuscule of subjects (i.e. what color should I paint my nails today) to the most serious of matters.
No matter what, she is always there for me. To love me, to listen to me, to talk me out of crazy ideas (yes, that happens), and to just be the best mom ever.
I love you, Mom.

Oh yeah, back to this recipe... I love this banana bread. As in, LOVE IT. It's moist (sorry if you hate that word!), sweet, and the perfect breakfast, snack, or dessert.
I think it is actually better on day 2 and on (rather than fresh out of the oven).

Equipment you'll need: large mixing bowl, loaf pan
1 cup all purpose flour
1 cup whole wheat pastry flour
1 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
3/4 cup Lakanto granulated sweetener* (use discount code "Annie" for 20% off!)
3/4 tsp salt
1/2 cup applesauce
3 bananas, mashed or pureed
2 tbsp lemon juice
1/3 cup water
1 tsp vanilla extract
*Or other granulated sweetener of choice
1. Preheat oven to 350F, spray loaf-pan with non-stick cooking spray, and set aside.
2. Combine dry ingredients (flours, cinnamon, baking powder, baking soda, stevia, and salt) in large mixing bowl, and use a fork to mix.
3. Add in remaining ingredients, and stir to combine.
4. Pour mixture into loaf pan, and bake for 35 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Thanks so much for your comment. I have started linking to what I use in the ingredient list - so in this post the stevia should link to amazon! I use the granulated (stevia in the raw brand) in this recipe. In general, if it says "stevia" I mean granulated. If it is liquid, I will always specify "liquid."
