This super simple Keto Peanut Butter Chia Pudding is the perfect way to get in my peanut butter fix without all of the extra calories that typically come with it!
I like to use peanut flour instead of regular peanut butter to save about 150 calories per serving!! Mix it with water, a dash of salt, and sweeten it with a touch of Sweet Leaf Stevia and it's just like peanut butter. Life changing ?

Ingredients: makes 1 serving
4 Tbsp peanut flour
4 Tbsp chia seeds
1/4 tsp Sweet Leaf Liquid Stevia Extract
1/2 tsp vanilla extract
2 dashes salt
1.25 cups water or non-dairy milk (or a combination)
Method:
1. Add peanut flour, chia seeds, and salt to bowl or mason jar, and mix with a fork.
2. Add in remaining ingredients, and stir until thoroughly combined.
3. Refrigerate for at least 10 minutes, or until pudding has thickened.
