This heavenly Keto Peanut Butter Chia Pudding is amazing!! It’s the perfect, healthy, make-ahead breakfast, snack, or dessert that is super high in fiber, protein, and Omega 3’s. Vegan, gluten-free, low-carb, dairy-free, oil-free & sugar-free, too!
As I’ve mentioned before, I LOVE peanut butter!!
I try to get it into my diet any way that I can 😍
This super simple Keto Peanut Butter Chia Pudding is the perfect way to get in my peanut butter fix without all of the extra calories that typically come with it!
I like to use peanut flour instead of regular peanut butter to save about 150 calories per serving!! Mix it with water, a dash of salt, and sweeten it with a touch of Sweet Leaf Stevia and it’s just like peanut butter. Life changing 😁
I’m a huge fan of Sweet Leaf stevia products for about a million reasons, but I’m just going to tell you a few. Bear with me!
First of all, you have probably noticed that I use stevia in many of my recipes.
It’s an incredible sugar-free sweetener with zero calories, zero carbohydrates, and no impact on blood sugar.
Sugar is one of the first things I nixed on my weight loss journey. I’ve always been a dessert-o-holic, so by switching to stevia, it enabled me to continue to eat all of the yummy baked goods that I love without loading up on calories… aka it made it EASY and DELICIOUS to lose weight!
My stevia brand of choice is Sweet Leaf because I have found it to not have any aftertaste like many other brands out there! It’s also non-GMO. It’s the number one stevia brand in health food stores and has been around since 1982! It’s also sold in 30 countries worldwide. Pretty impressive 🤓
Ok, back to this amazing Keto Peanut Butter Chia Pudding 😍

It’s the perfect breakfast, snack, or even dessert!
