These AMAZING Vegan Peanut Butter Oatmeal Blondies are the perfect breakfast or snack! They are loaded with nutritious ingredients, but taste like an indulgent treat. They're also gluten-free, sugar-free, oil-free, low-fat, low-carb, dairy-free and low-calorie - only 75 calories each!
I've been super into peanut butter things lately, and these Vegan Peanut Butter Oatmeal Blondies are just soooo delish!
They are basically oatmeal in a more fun and exciting form ?
And with a perfect, heavenly peanut buttery flavor ?
I always feel like I'm kind of a rebel when I get to eat things like these Vegan Peanut Butter Oatmeal Blondies for breakfast... they are tasty enough to be dessert but actually good for you!!
They are ridiculously easy to make and totally healthy. Vegan, gluten-free, oil-free, sugar-free, and low-calorie (only 73 calories a pop, wohoo!).

Equipment you'll need: small mixing bowl, large mixing bowl, 8x8 baking dish
Ingredients: makes 9 bars
6 Tbsp PB Fit + 6 Tbsp water
1.5 cups gluten-free quick oats
1/2 cup granulated * (use discount code ANNIE for 20% off!)
1/4 tsp salt
1.5 tsp baking powder
1/4 cup + 2 Tbsp water
1 tsp natural butter flavor
1 tsp liquid stevia extract
1 tsp vanilla extract
*Or other granulated sweetener of choice, equivalent to 1/2 cup sugar
Method:
- Preheat oven to 350F, spray baking pan with non-stick cooking spray, and set aside.
- Combine PB Fit with 6 Tbsp water in small mixing bowl, and mix until peanut butter consistency is reached.
- Combine oats, all ingredients in large mixing bowl, and mix well.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Have you ever tried these recipes with "regular" rolled oats (vs. "quick" oats) ? Just curious if they would turn out, or if it would be a chewy mess....
