They are basically oatmeal in a more fun and exciting form. With a perfect, heavenly peanut buttery flavor.I always feel like I’m kind of a rebel when I get to eat things like these blondies for breakfast… they are tasty enough to be dessert but actually good for you!!
They are ridiculously easy to make and totally healthy. Vegan, gluten-free, oil-free, sugar-free, and low-calorie (only 73 calories a pop, wohoo!).

Equipment you’ll need: small mixing bowl, large mixing bowl, 8×8 baking dish
6 Tbsp (36g) PB Fit powdered peanut butter + 6 Tbsp water
1.5 cups gluten-free quick oats
1/2 cup Lakanto Classic Monk Fruit Sweetener* (use discount code “Annie” for 20% off!)
1/4 tsp salt
1.5 tsp baking powder
1/4 cup + 2 Tbsp water
1 tsp natural butter flavor
1 tsp Stevita liquid stevia extract
1 tsp vanilla extract*Or other granulated sweetener of choice
1. Preheat oven to 350F, spray baking pan with non-stick cooking spray, and set aside.
2. Combine PB Fit with 6 Tbsp water in small mixing bowl, and mix until peanut butter consistency is reached.
3. Combine oats, all ingredients in large mixing bowl, and mix well.
