You may have noticed that I post a lot of "raw vegan" recipes.
What this means is that all of the ingredients are in their natural state, with no processing whatsoever.
One of the many benefits of eating raw foods is that they contain enzymes that actually help us digest our food.
These enzymes are destroyed with cooking and processing.
By providing us with the enzymes necessary for digestion, raw foods allow us to use the energy we'd normally expend digesting to do other things! Pretty cool, right?!

Equipment you'll need: Vitamix or food processor
Ingredients: makes 4 servings
3 cups berries (I used strawberries, blueberries, and raspberries)
1/2 cup pecans
1/4 cup walnuts
1/4 cup pitted dates
1/2 tsp cinnamon
Method:
1. Process pecans, walnuts, dates, and cinnamon in Vitamix or food processor until coarsely ground.
2. Add berries to mixing bowl and pour nut mixture on top.
3. Toss and enjoy!
