This recipe is so easy to make, and all you need is a high-speed blender or food processor.
You may have noticed that I post a lot of “raw vegan” recipes.
What this means is that all of the ingredients are in their natural state, with no processing whatsoever.
One of the many benefits of eating raw foods is that they contain enzymes that actually help us digest our food.
These enzymes are destroyed with cooking and processing.
By providing us with the enzymes necessary for digestion, raw foods allow us to use the energy we’d normally expend digesting to do other things! Pretty cool, right?!
Ok, back to this delicious Vegan Berry Crisp. It’s super easy to make and comes together in 5 minutes!

Equipment you’ll need: Vitamix or food processor
Ingredients: makes 4 servings
3 cups berries (I used strawberries, blueberries, and raspberries)
1/2 cup pecans
1/4 cup walnuts
1/4 cup pitted dates
1/2 tsp cinnamon
1. Process pecans, walnuts, dates, and cinnamon in Vitamix or food processor until coarsely ground.
2. Add berries to mixing bowl and pour nut mixture on top.
3. Toss and enjoy!

- 3 cups berries of choice
- 1/2 cup pecans
- 1/4 cup walnuts
- 1/4 cup pitted dates
- 1/2 tsp cinnamon
- Process pecans, walnuts, dates, and cinnamon in Vitamix or food processor until coarsley ground.
