Overnight oats are my new favorite breakfast - they are so convenient!! All you do is mix everything together in a jar, store overnight, and your breakfast is ready to go as soon as you wake up. Can't get much easier than that! I've been using Silk Light Soymilk because it is a good source of plant-based protein, an excellent source of Vitamin D and Calcium, and low in saturated fat. It's also super yummy! I love being able to get a big dose of protein, vitamins, and minerals in my breakfast to set me up for a great day, and this is the perfect recipe.

Forgot to mention I added strawberries also and then in the morning made it like smoothie.

I love overnight oats! I love fermenting mine with kefir and fruit (love mango). There was a period of time when I ate them for breakfast for 2 months straight. LOL

I loooooove overnight oats! I put flaxseed and pumpkin seeds and molasses in mine. In my opinion, oats are the best (and possibly the cheapest) breakfast around -- yay!
