Oh how I love brownies!!Always have and always will.
My mom used to make Duncan Hines brownies with powdered sugar on them for dessert for special occasions, and I LOVED those brownies.
She would always let me lick the batter – that was the best part! (I still always lick the batter of brownies when I make brownies…. it is STILL the best part).
Funny story about those brownies from my childhood, though, and how things change!
Recently my dad had his 65th birthday celebration, and the whole family (my brothers, sisters-in-law, nieces, nephews, and my fiancé and I) went to beautiful Scottsdale, Arizona to celebrate.
It was so much fun!
My mom being the amazing chef and hostess that she is made SO. MUCH. DELICIOUS. FOOD for everyone.
All of everyone’s old faves (fried chicken, lamb chops, mashed potatoes etc – I didn’t partake in that obviously)…
BUT no brownies… Pretty much every one of our childhood faves EXCEPT the brownies. This left me quite confused… so I asked her about it.
She told me that when she went to the grocery store, picked up the box, and looked at the ingredients, for the first time she just COULD NOT bring herself to buy them.
She was disgusted by the crazy ingredients she saw on the ingredient list.
It really is kind of horrific what they put in “food” these days. It’s not even food at all… it’s just fat and sugar and weird chemicals.
It has been so much fun over the years as I’ve gotten more into health, wellness, and nutrition to slowly watch all of those around me become more aware of the ingredients in packaged foods and just about nutrition in general!
Also watching friends and family experiment with healthy recipes just makes my heart sing with glee!
Side note: I get questions about this topic so often: If you are the only person who is into healthy eating/nutrition in your sphere and you find yourself getting frustrated with those around you who aren’t into it, my biggest piece of advice to you is this: be patient.
Lead by example. And never ever ever proselytize.
I tried proselytizing for probably 2 years at the beginning of my plant-based journey (I’m not proud of it!) and it does not work.
It just makes everyone super annoyed and even farther away from ever even thinking about adopting healthier eating habits.
Anyway. Back to these brownies. THESE brownies are the complete opposite of Duncan Hines in every way except that they taste freaking DELICIOUS.
They are super healthy for you and loaded with amazing, nutritious ingredients, but you will never be able to tell by their taste!
Jam packed with protein and fiber, and even a surprise veggie! Actually technically it’s a fruit… but it seems like a veggie. You’ll know what I mean when you scroll down to the recipe!
These brownies are also vegan, gluten-free, sugar-free, and only 64 calories each. So feel free to have a few. Woohoo!

1. Preheat oven to 350F, spray muffin tin with non-stick cooking spray, and set aside.
2. Add oats to blender, and process until flour-like consistency is reached.
3. Add in remaining ingredients, and blend until smooth.
4.
