They are fudgy and the absolute PERFECT velvetty brownie texture. I know that is a very personal subject - the perfect brownie texture.
Are you a gooey and chewy kind of brownie lover, or more of a cake-like brownie person? I like FUDGY. And kind of gooey. And moist! That is these.
And the red velvetty-ness makes them perfect for the holiday season!!

These look so delicious!
I just (re)discovered the magic of beets and I've been obsessed with throwing them into everything I cook. I will definitely have to try these. Thanks!
Yay! I love beets too! They are so delish 🙂 Hope you love this recipe! It's one of my favorites 🙂
I'm not sure where you got 73 calories from, these really have 157 calories each if you add up the macros.
I know what happened! Thank you so much for pointing this out. When I calculated this originally I forgot to use NET carbs for the erythritol (so that added in an extra 20g carbs per serving). I will update this now - thank you SO much!
Hiya! Making these today, just wondering if you know whether they would freeze okay or not?
Hmm. I've never tried, but I don't see why not. Maybe try freezing one before doing a whole batch just in case! Haha ????
I really love this recipe! I've made it two times now (subbing dates for the fruit sweetener) and from now on will be keeping beets and yellow squash on hand for whenever the mood for these strikes...!
YAY!! So glad you like this recipe! It is one of my favorites! This one is really similar, but you don't need the beets 😀 https://www.vegannie.com/recipes/healthy-fudgy-brownies
Thanks so much for pointing this one out! I am really enjoying your recipes (made the Gingerbread Bars and the Cranberry Oat bars as well and loved them!), and looking forward to trying these other brownies too...!
Thank you so much for the kind words, Patience! I am soooo glad you're enjoying my recipes!!! Makes me so happy!
These are incredible. I lost my xanthan gum but used arrowroot, and never heard of “natural butter flavor” so left it out. I cut them into 16 pieces. Thank you!
Hi Linda! I'm so glad you discovered these! I just LOVE THEM. Totally fine to omit the natural butter flavor - I do half the time 🙂 Check out my Healthy Fudgy Brownies (https://www.vegannie.com/recipes/healthy-fudgy-brownies) They are very similar in texture and amazing as well! Thanks so much for your comment!
Hi, Annie! Didja know that u can buy veggies in powder form? Yup! And the ones I get fron Amazon have nothing else in the containers! No added ANYTHING!! Just, for instance, pure spinach powder or pure beet powder!
Wow!! How awesome! I didn't know that! Thank you for sharing!
