These cookies are super healthy, easy to make, and fantastically chocolatey and sweet!I have totally hopped on the new gluten-free trend of using mashed beans in baking (not because I am against gluten, but because I like the idea of using as many whole foods as I can when I'm in the kitchen).
I know it seems a little strange, but I promise - you cannot tell at all that there are a healthy dose of legumes hiding in your cookies!

Equipment you'll need: large mixing bowl, baking sheet, parchment paper
1.5 cups black beans (cooked or canned)
1/2 cup gluten-free quick oats
1/4 cup applesauce
2 Tbsp cocoa powder
1/2 tsp Lakanto Liquid Monkfruit Sweetener (use coupon code ANNIE for 20% off!)
2 Tbsp cacao nibs or chocolate chips, optional
1. Preheat oven to 350F.
2. Mash black beans in large mixing bowl. (Note- if you have a high-speed blender, you can blend them, too!)
3. Add in the rest of the ingredients, and mix thoroughly.
4. Use a tablespoon to scoop out the dough and use your hands roll into a ball shape
5. Place on parchment paper, and flatten with the palm of your hand.
6. Bake for 20 minutes.
