I love chocolate chip cookies!!
I am always trying to come up with a new, healthier way to enjoy them.
This recipe is super simple to make, and completely vegan, gluten-free, and low in sugar (only 2.6g per cookie!).
They are also very low in calories and fat, making them the perfect, guilt-free treat that you can enjoy any time of the day.Cost per serving: $0.14

Equipment you'll need: high-speed blender or food processor, large mixing bowl, baking sheet, parchment paper (optional)

Ingredients: makes 6 cookies
3/4 cup oats (any kind)
1/4 tsp baking soda
pinch of salt
1 Tbsp almond milk
1 Tbsp applesauce
1/2 tsp liquid stevia (add more for more sweetness)
2 Tbsp chocolate chips

Method:
1. Preheat oven to 375F and spray cookie sheet with non-stick spray.
2. Combine first 6 ingredients in food processor or high-speed blender.
3. Transfer to mixing bowl, and mix in chocolate chips.
4. Form into cookie shapes, place on cookie sheet, and bake for 6 minutes.
