Confession: I like to eat cookies for breakfast.
I'm not really into store-bought, high-calorie, highly-processed, cookies, so I found a recipe that will allow me to indulge in my cookie addiction without all the added sugar and calories that usually come with a cookie.
These chewy, delicious Healthy Breakfast Cookies are low in calories, fat, and sugar with lots of fiber, and they are super easy to make.
Made with rolled oats and whole wheat flour, these cookies will surely make you feel full and satiated all morning long.
You will also feel the joy of knowing you got to eat cookies for breakfast!

Equipment you'll need: mixing bowl, baking sheet


3/4 cup gluten-free quick oats
3 Tbsp whole wheat flour (or gluten-free all purpose flour)
1/4 cup + 2 Tbsp applesauce
3/4 tsp baking powder
1/2 tsp vanilla extract
1/2 cup granulated * (use coupon code ANNIE for 20% off!)
2 Tbsp cacao nibs
dash of cinnamon*Or other granulated sweetener of choice equivalent to 1/2 cup sugar
1. Preheat oven to 350F, spray baking sheet with non-stick cooking spray, and set aside.
2. Combine all ingredients in a mixing bowl, and mix thoroughly.
3. Scoop out cookie dough into 8 equal-sized balls and place on baking sheet.
4. Bake for 10 minutes, and enjoy your guilt-free breakfast cookie!

What is Stevia? Can I incorporate some whet germ and replace the flour with oat flour?
Hello Daneila! Stevia is a no-calorie sweetener. You can use the same amount of sugar or brown sugar if that's easier! Also, I am not 100% sure how it will turn out with oat flour, but I'm sure it wouldn't be bad 🙂

I assume that you mean stevia powder as opposed to stevia liquid?
I am concerned about the amount of stevia in this recipe. I am honestly afraid to make this, because that's almost the entire 1oz container of stevia I bought at Trader Joes! Is that correct?
Hi Richard! I'm thinking you probably purchased stevia powdered extract rather than regular stevia powder. The extract is much more concentrated. 1 tablespoon of stevia powder is equivalent to about 1/4 teaspoon of stevia powdered extract 🙂
Hi Annie... Yes! That's right, I got Trader Joe's powdered extract. I ended up using about 1tsp in the recipe, which I guess is the equivalent of 4tbsp -- which was too much!

I am not 100% sure how much you should use, but I know it can be done! I would start with adding 3 Tbsp of honey or maple syrup and then tasting the batter to see if it's sweet enough 🙂 If not, add more.

Can tapioca flour be used?
I have never worked with tapioca flour so I really don't know! Would love to hear how it turns out though if you do end up trying it 🙂
