I have always loved macaroons!
They were my favorite Passover treat growing up ??
I have fond memories of sitting around the table after the seder was finished and getting to munch on all of the yummy Passover-friendly goodies!
I also loved those multicolored gummy lemon/lime/orange slices - do you know what I'm talking about?!
But macaroons were still my fave.
These Keto Vegan Macaroons are about a million times healthier than store-bought.
Not only are they keto & vegan, but they are also sugar-free, gluten-free, oil-free, and super low-calorie - only 37 calories each!!!
They are slightly different in consistency than a traditional macaroon (a little bit more shortbread-like), but with a perfect coconut flavor.
Totally munchable and addictive.

Any suggestions to replace the oat fiber? I have celiac and it might be gluten free but I still have to stay away from oats. Would love to try this!

Hmm. I am not sure - this will require some experimentation!! Maybe try adding 1 extra tablespoon of coconut flour and see if it works. I can't vouch for this, but that's what I would try first! Good luck!!!

Hi Mira! I haven't tried any other sweetener, but granulated stevia and erythritol in the same amount should work and keep the calories as they are! Maybe add a little bit more stevia 🙂
