These Healthy Vegan Oatmeal Raisin Cookies are totally delicious and easy to make! They are low in calories and also oil-free, low-carb, free of added-sugar, and gluten-free optional, making them the perfect guilt-free treat. Only 62 calories each!
I asked y'all on the VegAnnie Facebook page if there were any recipes you would like to see on the blog, and oatmeal raisin cookies was a super popular request! I was pretty excited about this because oatmeal raisin cookies have always been one of my faves. Also, who doesn't want an excuse to make cookies?!
Anyway, I hopped into the kitchen and started experimenting until I developed the most perfect, low-calorie, oil-free, sugar-free oatmeal raisin cookie that ever lived... and here they are!

Equipment you'll need: high-speed blender (optional), large mixing bowl, cookie sheet
1 cup unsweetened applesauce
1 cup gluten-free quick oats
1/2 cup white whole wheat flour (or gluten-free all purpose flour for a gluten-free version!)
1 cup Lakanto Monk Fruit Sweetener (use discount code "Annie" for 20% off!)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup raisins
1. Preheat oven to 350F, line cookie sheet with parchment paper or spray with non-stick cooking spray, and set aside.
2. Combine all ingredients except raisins in high-speed blender, and blend until smooth.*
3. Transfer blended batter to mixing bowl, add raisins, and stir.
4. Scoop 1.5-2 Tbsp of batter onto baking sheet, flatten with the palm of your hand, and bake for 10 minutes.

Thank you for this recipe, I am keen to try it out as soon as possible, but, because I don't believe we have the Lakanto brand here in Australia, what is the equivalent measurement in an alternative sweetener - maple syrup, radapura sugar, .... etc.

Hi, I have been wondering if i can replace the granulated sweetener for liquid stevia and replace the bulk with additional applesauce while reducing the liquid content. Would that work?
