Anyway, I hopped into the kitchen and started experimenting until I developed the most perfect, low-calorie, oil-free, sugar-free oatmeal raisin cookie that ever lived… and here they are!

Equipment you’ll need: high-speed blender (optional), large mixing bowl, cookie sheet
1 cup unsweetened applesauce
1 cup gluten-free quick oats
1/2 cup white whole wheat flour (or gluten-free all purpose flour for a gluten-free version!)
1 cup Lakanto Monk Fruit Sweetener (use discount code “Annie” for 20% off!)
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 cup raisins
1. Preheat oven to 350F, line cookie sheet with parchment paper or spray with non-stick cooking spray, and set aside.
2. Combine all ingredients except raisins in high-speed blender, and blend until smooth. (Alternatively, combine all ingredients in mixing bowl, and mix until thoroughly combined – this will yield a cooke that has full oat pieces in it unlike what is pictured – still delicious, though! Then, skip to step 4.).
3. Transfer blended batter to mixing bowl, add raisins, and stir.
