I think I have created a miracle recipe you guys. These Skinny Chocolate Chip Cookies have only 25 CALORIES EACH.
I repeat 25 CALORIES.
They aren’t the biggest cookies you’ve ever seen… BUT they definitely aren’t the smallest.
You won’t be disappointed by their size.
Not only are they low-calorie, they are also loaded with fiber (to help you feel full!), sugar-free, gluten-free, low-carbs, and oil-free. Enjoy your cookies, and eat the whole batch if you want, YAY!
I've shared my philosophy with y'all before on why I love these kinds of low calorie treats. For so many years I felt so restricted in my weight loss journey by what I was "supposed" to eat and what I couldn't eat and "portion control" that it became totally exhausting and beyond unenjoyable.
I still get so excited when I get to eat FIVE COOKIES at once if I want to or even SEVEN!
I lost all of my weight by simply counting calories. Not macros or anything else. JUST calories. That way, I was able to eat WHATEVER I WANTED as long as it fit into my calorie budget for the day!
I actually still use calorie counting during maintenance! In my opinion, tracking calories is the ONLY sustainable way to drop weight and keep it off. And you get to eat whatever foods you want, too!
Low-Calorie Chocolate Chip Cookies Recipe
Cost per serving: $0.18
Calories per serving: 25
Equipment you'll need: mixing bowl, baking sheet
Ingredients: makes 8 cookies
2 Tbsp coconut flour
1/4 cup peanut flour
1/4 cup granulated Lakanto Monk Fruit Sweetener
3 Tbsp oat fiber
3 dashes cinnamon
dash of salt
6-7 Tbsp water
1/2 tsp vanilla extract
1 Tbsp Lily's Sugar-Free Chocolate Chips
Method:
1. Preheat oven to 350F, line baking sheet with parchment paper, and set aside.
2. Combine coconut flour, peanut flour, sweetener, oat fiber, cinnamon, and salt in mixing bowl and whisk with a fork.
3. Add in 6 Tbsp water and vanilla extract, and stir. If dough isn't fully moist, add in more water, one tablespoon at a time.
4. Stir in chocolate chips.
5. Form dough into 8 equal-sized balls, place on baking sheet, and slightly flatten with the palm of your hand.
6. Bake for 12 minutes.
7. Allow to cool completely before eating.

Hi! What does the oat fiber do? Does it help bind like guar or xanthan gum?

Hi Zoe! Oat fiber is a flour-like consistency that doesn't do much except add bulk with no extra calories. I get it on amazon and just love it! I don't think it's essential to the recipe - I would just try adding less water or more peanut flour or coconut flour in its place 🙂

Oh, man. I write this with a heavy heart and a sad tummy.
I was so excited to try this recipe as someone trying to count calories for fat loss (and a five-year vegan). I cook daily but don’t bake too much because I don’t want all the treats around my house. Found these low-calorie recipes and thought I’d break my streak.
I excitedly bought all the recommended ingredients on Amazon and assembled my cookie arsenal. I measured everything meticulously. The dough definitely seemed a little weird as I rolled it into balls. But I wrote it off as just a low-calorie cookie thing.
I was never expecting these to taste like “real” cookies. But I at least expected them to be edible.
I had to bake them for an extra 5+ minutes for them to be in any way done. When they stopped being raw, they immediately switched to burnt.
The consistency was doughy yet simultaneously crumbly. And the taste was super aftertaste-y. The Lily’s chips (which taste great, by the way, and I’m happy to have discovered) couldn’t even save it.
So at the end of all that struggle, I wasted some figurative dough (moolah) on fancy ingredients. And then I wasted actual dough by not being able to eat my finished product.
I truly caution you against making these unless you have extreme skills in making gluten free, low-calorie ingredients into magic. For the average baker among us, these ratios, ingredients, and instructions don’t add up to anything but a sad disappointment.
I ended up eating one of my usual Trader Joe’s vegan oatmeal chocolate chip cookies for 140 calories after this. I guess there really is nice such thing as a diet cookie. I should have known the glass of almond milk really is half full, when it comes to the success of these types of recipes.

Oh my goodness, Nicole I am SO sorry to hear this!!! Mine came out so well and have made the recipe multiple times! Since you already have all of the ingredients maybe if you wanted to try again you could measure out (in grams) the amount of flour. I used 15g of coconut flour and 30g of peanut flour - maybe that would help!!!

I love these as a low calorie, low carb alternative chocolate treat. I am used to baking with oat fiber. I did substitute one tablespoon of the oat fiber with cocoa powder. I also used sugar free peanut butter and vanilla syrups for some of the water and added 1/2 tsp of molasses for a traditional caramelized taste. So, so yummy! This has become my go-to bedtime snack ????. Thank you for sharing your recipe!
