Sugar cookies are one of my faves.
Always have been!I used to eat those terrible (but amazing) sugar cookies from the grocery store with the pink and yellow frosting - do y'all know what I'm talking about?
The ones with sprinkles on top?
They are probably so artificial that they are made of plastic and in a laboratory somewhere.
Anyway, these are just as good.
Not the same (of course - how could I seriously replicate those?!!) but so so so yummy.

Equipment you'll need: high-speed blender, baking sheet, medium bowl
1.5 cups gluten-free quick oats
1/4 cup + 2 Tbsp applesauce
2 Tbsp water
1/4 cup cooked or canned garbanzo beans
1/2 tsp xanthan gum
1/2 tsp baking powder
1 tsp vanilla extract
1/4 tsp natural butter flavor
1 cup powdered Lakanto Monk Fruit Sweetener* (use coupon code ANNIE for 20% off!)
My favorite Sugar-Free Frosting
1. Preheat oven to 350F, line baking sheet with parchment paper (or spray with non-stick cooking spray), and set aside.
2. Combine all ingredients in high-speed blender, and blend until smooth.
3. Spoon mixture into medium bowl, and refrigerate for 10 minutes.
4. Roll dough into ball shapes, place on prepared baking sheet, and flatten with the palm of your hand to about 1/4 inch thick.
5. Bake for 10 minutes.
6. Let cool and frost with frosting, if desired.

I'm loving the sound of these sugar free cookies with oats and chick peas..Do you think you could make them without the swerve and the applesauce would be sweet enough?

I don't think the applesauce would make them sweet enough (but I have an extreme sweet tooth :D) I would try substituting in another kind of sugar or sugar alternative 🙂

I was going by the definition that something is considered "low" in a particular nutrient if it has less than 5% of the daily value (http://www.mayoclinic.org/healthy-lifestyle/nutrition-and-healthy-eating/expert-answers/food-and-nutrition/faq-20058436). For carbohydrates, 5% is 15g of carbohydrate. In using this definition, I have received many comments similar to yours, and I apologize for the confusion!!!

I'm sure it would work if you replaced the applesauce but it might have a slight pumpkin flavor (sounds pretty delicious to me actually!). I have never used carbquik so I have no idea how it would work, but if you try it I'd love to hear how it went!!

HI!!! Quick question...can I sub out the chickpeas (cannot tolerate any beans) with something? Coconut flour, protein powder, oat fiber, peanut flour??? or a mix of these?? and in what quantities? What is your professional opinion? 🙂 Loving all your recipes. Thanks for sharing your talent with all of us. I was 75% raw vegan for 10 years but had to incorporate meat due to some health issues but veganism is still in my blood and I do prefer it!

Hi Keri! Hmmmm... I would try doing 1/4 cup pureed extra firm tofu. If the batter is runny then I would add in any of the options you listed one tablespoon at a time! And thank you sooooo much for your kind words!!! You are so sweet! Vegan is so not for everyone - it's all just about balance and incorporating all of the foods that make us feel GOOD!!! Good luck with the cookies - would love to hear how they turn out if you do make some substitutions!
