These scrumptious Vegan Trail Mix Cookies are made with Oriya Organics Gather Paleo Protein Powder.

Ingredients: makes 12 cookies
Dry ingredients:
2 scoops Oriya Organics Gather Paleo Protein Powder (or 36g protein powder of choice)
1/2 cup granulated Lakanto Monk Fruit Sweetener* (use coupon code ANNIE for 20% off!)
1/2 tsp baking powder
1 cup gluten-free quick oats
3/4 cup walnuts, chopped
1/2 cup shredded coconut
1/2 cup raisins
Dash salt
Wet ingredients:
1 cup water
1/4 cup Lakanto Sugar-Free Maple Syrup** (use coupon code ANNIE for 20% off!)
*Or other granulated sweetener of choice, equivalent to 1/2 cup sugar
**Or other sticky sweetener of choice, equivalent to 1/4 cup maple syrup
Method:
- Preheat oven to 350F, line baking sheet with parchment paper or spray with non-stick cooking spray, and set aside.
- Combine all dry ingredients in mixing bowl, and mix until thoroughly combined.
- Add in wet ingredients, and stir.
- Form into 12 equal-sized balls, place on baking sheet, and flatten with the palm of your hand into cookie shapes.
- Bake for 18 minutes.
