Equipment you'll need: high speed blender, small mixing bowl
1 cup raw pecans
1/2 cup Pb2 + 1/4 cup water (or PbFit or peanut flour)
7 medjool dates, pitted and chopped
1 1/4 tsp vanilla extract
1. Add Pb2 and water to small mixing bowl and stir until you have a peanut butter consistency.
2. Combine all ingredients in high-speed blender and blend until the mixture becomes a dough-like texture.
3. Roll into tablespoon-sized balls, and press down with a fork to flatten and create a crisscross pattern.
4. Store in the refrigerator for up to a week!

I love your cookies, Annie. Is it alright if I add some juicer extracted pulp from vegetables and fruits, and how much pulp do I add? Will that expand the quantity of the cookies? Will it lower the calorie content. Lower the sugar and sodium? Please let me know.
