Fall means school is in full gear (I'm starting my 3rd year of grad school - where does the time go?!), beautiful weather, and pumpkin-flavored EVERYTHING. I am so excited. I loooove pumpkin.
Anyway this post has nothing to do with pumpkin, so I'll get down to business: this is a super delicious recipe that is only 49 calories per GIANT milkshake!
The reason it's so low in calories is that it uses the same magical ingredient as my Skinny Mocha Frappuccino - xanthan gum.
Xanthan gum is an amazing thickener for smoothies, milkshakes, and sauces that adds almost no calories! You can read more about it in my Skinny Mocha Frappuccino post.
Anyway, this milkshake is sooo yummy and has been one of my go-to's this summer. You may have seen me post about it on Instagram a few months ago! (PS - have you followed me on Insta yet?!)
I love to be able to have a humongous chocolate milkshake whenever I feel like it - this is the perfect recipe for those times, whenever they may arise.
For me, that happens quite often! Enjoy!
Cost per serving: $0.71
Calories per serving: 49
Equipment you'll need: blender
1.5 cups water
1/4 cup unsweetened almond milk
1 Tbsp cocoa powder (or cacao)
2 Tbsp Lakanto Monk Fruit Sweetener* (use discount code "Annie" for 20% off!)
1/4 tsp liquid stevia + 10 extra drops
1 tsp vanilla
3 dashes salt
1/2 tsp xanthan gum
dash cinnamon
5-7 ice cubes*Or other granulated sweetener of choice

Oh my gosh, Annie, this was so good! I didn’t quite know what to expect but it was thick and chocolatey, and tasted better than many of the higher-calorie, higher-fat milkshake/smoothie recipes I’ve tried. My only modification was to make this with coconut sugar, since I didn’t have Lakanto sweetener on hand. Thank you for the great recipe! I look forward to making it again.
