- Make chocolate layer.
- Make peanut butter layer.
- Transfer half of chocolate layer to lined muffin tin.
- Top with peanut butter layer.
- Pour remaining chocolate layer on top.
- Freeze for 20 minutes!

For the chocolate coating:
1/4 cup coconut oil, melted
3 Tbsp cocoa powder or cacao powder
1 Tbsp Lakanto Sugar-Free Maple Syrup* (use coupon code ANNIE for 20% off!)
1/2 tsp vanilla extract
8 drops liquid stevia extract
For the peanut butter filling:
1/4 cup peanut flour
2-4 Tbsp water
6 drops liquid stevia extract
dash salt
* Or agave or regular maple syrup
Method:
- Line muffin tin with tin liners.
- Whisk together all chocolate coating ingredients in small mixing bowl.
- Place a tablespoon of chocolate coating into each muffin liner.
- Place in freezer for 10 minutes to harden.
- While chocolate is hardening in freezer, combine peanut butter filling ingredients in a separate mixing bowl and mix until a peanut-butter consistency is reached.
- Remove chocolates from freezer and use a teaspoon to spoon out peanut butter mixture into each muffin liner.
- Place an additional tablespoon of chocolate mixture on top of the peanut butter.
- Freeze for 15 minutes, remove, and enjoy!

Hi ANNIE,
Okay, Reese Peanut Butter Cups were my favourite junk treat ever until I became vegan and generally stopped eating garbage. If you speak the truth and these taste just like my beloved cups I'll be over the moon. One question, must I use PB2 or can I use regular organic peanut butter. I have never purchased it because I think it has a lot of added sugar(perhaps explains why these taste identical.) however if this is a must I will order some. Please advise. Much thanks.

Hi Bridget! I am speaking the truth! You will be amazed! But yes, you can totally use regular peanut butter. I just used PB2 to reduce the calories. If you use regular peanut butter just omit the water. Please let me know how they turn out!! 🙂
