Healthy Carrot Cake Bites Recipe
Healthy Carrot Cake Bites
Ingredients
- 1/2 cup coconut flour
- 1/2 cup + 1 Tbsp water
- 2 Tbsp unsweetened applesauce
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- 4 Tbsp granulated Lakanto Monk Fruit Sweetener* (use discount code ANNIE for 20% off!)
- 1 medium carrot (60-70g), finely chopped or shredded
- 4 Tbsp reduced fat shredded coconut
Instructions
- Combine coconut flour, water, applesauce, and vanilla extract in large mixing bowl, and stir.
- Add in cinnamon, Lakanto, and shredded carrots to bowl, and stir to combine.
- Refrigerate dough for 15 minutes.
- Place shredded coconut in small bowl.
- After 15 minutes, remove dough from fridge and roll into 15 equal-sized cake balls. Roll each ball in shredded coconut until evenly coated.
- Store in refrigerator for up to a week.

Ingredients: makes 15 carrot cake bites
1/2 cup coconut flour
1/2 cup + 1 Tbsp water
2 Tbsp unsweetened applesauce
1/2 tsp vanilla extract
1 tsp cinnamon
4 Tbsp Cocnut sugarSweetener(I didn't have to one from the recipe)
5 baby carrots chopped (I did this in my new mini chopper)
4 Tbsp reduced fat shredded coconut
My batch turned out dry, great flavor, so I added chopped pecans and 1 stick of butter and chilled them. Don't forget to change my nutrition for your Keto budget.

My dough is squishy/watery when squeezed after refrigerating. The flavor is good, but it makes it difficult to shape into a ball. Suggestions? Thanks!

Try less water! Maybe start with 1/4 cup and slowly add until the dough is sufficiently moist but not mushy 🙂

Mine came out dry/grainy. I think it is the coconut flour. Any suggestions for dissolving that or using something else? They have good flavor, but wouldn't make them again unless I can remove the grainy texture.

It indeed came out yummy, but not as expected. It wasn't nearly firm enough to ball up even after chilling. I even tried a 2nd batch with less water and the same result. I ended up putting them in cupcake liners and baking half the batch for the sake of experimenting. Great taste, mediocre texture (my fault). Next year I'll do it properly and I know they'll come out perfect. Thank you so much for the recipe!
