1/2 cup cooked quinoa
1/2 cup extra firm tofu, cubed
1/2 cup bell peppers, diced
1/8 cup cilantro
2 Swiss chard leaves (or collard green leaves)
any extra veggies you feel like
Salt and pepper, to taste
Mustard or soy sauce (optional, to taste)
Method:
1. Place quinoa, tofu, and veggies as close as possible to the spines of the chard leaves, leaving enough room at the top and sides of the leaves to wrap them up.
2. Sprinkle with salt and pepper, and drizzle with mustard or soy sauce if desired.
