Sandwiches are one of my favorite lunch items because they are easy to make, easily customizable, and can really pack a nutritional punch! This is a simple recipe that can be thrown together in minutes and is the perfect sandwich to bring to school or work. Add whatever additional veggies/condiments you'd like, and enjoy with some Perfect Sweet Potato Fries, Carrot Fries, or veggies and Homemade Hummus.

Ingredients: makes 1 sandwich
1 bun or 2 slices bread (gluten-free, paleo, or low-carb/keto bread, if desired)
½ avocado. sliced
1 slice tomato
1 Tbsp Dijon mustard
