No-Bake Superfood Mocha Crunch Bites
These superfood bites are made with a base of oat flour, coconut flour and buckwheat groats, cocoa powder for added chocolatey goodness, Swerve instead of sugar for sweetening, applesauce (great for adding sweetness and moisture while still being healthy), ground flaxseed for binding without eggs (with the bonus of added fiber), and a special secret ingredient.
What Is Mushroom Coffee?
A lot of us love our morning cups of coffee, and maybe even more during the day. The downside to that cup of coffee is the crash that comes when it wears off. For this reason, I am currently loving Go Sharp Mushroom Coffee. It uses mushroom extracts to give you steady focused energy, without the jitters, and without the crash.
What Does Mushroom Coffee Do?
The company, Mushroom Cups, uses high-quality organic Peruvian Arabica coffee, then adds an extract made from chanterelles and cordyceps. These mushrooms give an extra boost of vitamins D and B and increase cellular energy production. Both of those factors make your cup of coffee keep you energized for longer.
I decided to take it up a notch and use the Go Sharp Mushroom Coffee to make No-Bake Superfood Mocha Crunch Bites. After all, a cup of coffee isn't always the most convenient, but with these vegan keto snacks, you can just pop some in your purse for an on the go pick me up.
Are Mushrooms Healthy?
Chanterelle mushrooms are absolutely packed with vitamins B3, B5, and D, iron, and copper. Vitamin B3 boosts brain function, B5 helps your body process food into energy efficiently, and iron and copper are vital for energy and optimal brain function.
Cordyceps, a Tibetan mushroom commonly used in Chinese Traditional Medicine, improves your endurance, energy, and stamina, allowing you to perform better for longer.
How to Make Energy Balls?
This such an easy recipe that you can do in only a few minutes. The buckwheat groats are going to work as a nutritious coating, so set those aside. Mix all your ingredients in a bowl with a fork until fully combined. Make little balls and roll in the buckwheat groats. All done!
Try these superfood bites for a pick-me-up during work, or before a workout. If you enjoy these, also try Vegan Trail Mix Cookies, Skinny 25 Calorie Chocolate Chip Cookies, and Keto Vegan Peanut Butter Protein Cookies.
