I love mini things - they are just so cute! At only 32 calories each, these scrumptious carrot cake muffins are basically a dieter's dream come true. Grab a few for breakfast, a snack, or dessert and enjoy a delicious, guilt-free treat!

Equipment you'll need: large mixing bowl, muffin tin, muffin tin liners (optional)
Method:
1. Preheat oven to 325F.
2. Line muffin tin with muffin liners or grease with cooking spray, and set aside.
3. Mash banana in mixing bowl.
4. Mix in the rest of the ingredients until thoroughly combined.
5. Place a tablespoon of batter into each muffin liner.
6. Bake for 22-23 minutes.
7. Let cool and enjoy!

I have been following your IG and checking your blog throughout the winter but I haven't made as much as I want to. When you use coconut flour or whole wheat pastry flour - does it matter which one? I don't have whole wheat (just coconut right now) and was wondering if they can be switched for this recipe?

I just made these. I didn't have a banana and only 1/4 cup applesauce so I used 1 1/2 cup of carbmaster yogurt instead. I also used whole wheat flour instead of whole wheat pastry flour and 23 baby carrots in replace of 3 big carrots. The had a great texture and smell (for the most part I need to grind the carrots a little more they were kind of big) , but some of them had kind of a bad taste I think it may have been the applesauce or the carrots, but I'm not sure. Overall it was a pretty good recipe in terms of ease to make and clean as well as ingredients and substitutions. If I can figure out what I did to make it have that bitter taste I'll definitely make them again! thank you for all of the work you put into your recipes!!

Hey! I just made these, we had to add about 8 more minutes, and I replaced the stevia with organic sugar because I didn't have any, but absolutely DELICIOUS! Also, for me it made 24 1 inch muffins and 5 3 inch muffins.
