For those of you who still haven't hopped on the kale bandwagon, this is the perfect recipe to start with.
The creamy, delicious dressing masks the bitter taste of the kale (especially if you refrigerate for a few hours before serving).
Kale is an amazingly powerful superfood. It has been shown to lower the risk of five types of cancers (bladder, breast, colon, ovarian, and prostate), and it is packed with phytonutrients that help reduce inflammation and oxidative stress (which causes aging).

Equipment you'll need: large salad bowl, small mixing bowl
4 cups chopped kale
1 cucumber, chopped
1/3 cup raisins
1/2 cup walnuts, halved
For the dressing:
2 Tbsp Dijon mustard
1 Tbsp Red Wine Vinegar
2 Tbsp water
1. Tear kale into small pieces, place in large salad bowl, and massage it with your hands until it becomes a brighter green color (about 3 min). Add in chopped cucumber.
2. In a separate bowl, combine dressing ingredients. Mix thoroughly, pour over kale and cucumber, and toss.
3. Add in walnuts and raisins.
4. Serve immediately or store in refrigerator for a few hours (or overnight) before serving.

I would recommend massaging the kale first with a little olive oil and sea salt to make it more tender.
Great point!! I forgot to mention to massage the kale. I have only recently learned this trick, and boy does it do wonders! I just massage it dry and it works wonderfully. Thanks so much for your helpful comment!
Could a crisp cut up apple substitute for the cucumber? Has anyone tried this?
I'm sure that would be delicious! Haven't tried it though.
