I am currently visiting my parents in beautiful Scottsdale, Arizona for the weekend. When I was in college, I used to love being lazy and letting my mom cook for me whenever I'd go back home to visit. Now, every time I come home I cannot wait to get into the kitchen to use my parents as guinea pigs for new recipes (and they are equally as excited!). I whipped up this quick bean salad in 10 minutes, and it was a huge success! What I've learned through my journey in the kitchen is that making yummy meals doesn't have to be complicated with a long list of ingredients - simple recipes can be just as delicious. This easy, delightful bean salad is the perfect example. Enjoy!

Equipment you'll need: mixing bowl
1 can (15 oz) garbanzo beans, drained
1 can (15 oz) kidney beans, drained
3 cups kale, choppedFor the dressing:
3.5 Tbsp apple cider vinegar
1 Tbsp dijon mustard
1 tsp agave
dash of garlic powder
1. Combine dressing ingredients in small bowl and mix thoroughly.
2. In large salad bowl, combine garbanzo beans, kidney beans, and kale.
3. Pour dressing over salad ingredients, toss, and enjoy!
