I had never heard of kelp noodles before finding a recipe online that called for them, but I was so pleased with my new discovery when I tried them that they are now a staple in my fridge. Kelp noodles are a delicious, healthy swap for pasta that take on the taste of whatever dressing or sauce you top them with, and they can be found at your local whole foods for only $3.99 per package. Ingredients: makes 2 servings
1/2 package kelp noodles
1 cup red, orange, and/or yellow peppers, diced
1/2 cup red cabbage, chopped
1/2 cup shredded carrots
1/2 cup edamame
1 Tbsp sesame seeds (optional)

For the dressing:
1 clove garlic, minced
juice of 2 limes
1/4 cup water
2 Tbsp Bragg's liquid aminos (or my new favorite, coconut aminos)
4 Tbsp PB2 (or regular peanut butter)
1 tsp ginger
8 drops liquid stevia (or other sweetener of your choice)
Method:
1. Combine kelp noodles, bell peppers, cabbage, carrots, and edamame to large salad bowl.
2. Prepare dressing: add all dressing ingredients to blender and blend until consistency is smooth. You can also just whisk all the ingredients together by hand if you don't have a blender.
3. Pour dressing over salad ingredients and toss.
4. Top with sesame seeds, if desired.
