Basically, eating a delicious, huge salad like this one is like taking a multivitamin! Ingredients: makes 3 servings
4 cups kale, chopped
2 stalks celery, chopped
1/2 small beet, grated into shreds

For the dressing:
3 stalks celery
5 green onions
juice of 1 small lemon
1 clove garlic
1 tsp basil
salt and pepper, to taste
Method:
1. Combine kale, celery, and shredded beet in large salad bowl.
2. Add dressing ingredients to blender, and blend until smooth.
3. Pour dressing over salad, toss, and enjoy!
