Even though I love being in the kitchen, I like to save time whenever possible. One way that I do this is by making salad dressings ahead of time and using them throughout the week. When I made my Raw Rainbow Pad Thai recipe the other day, I made a big batch of the creamy, delicious, Thai peanut dressing that goes with it. This really came in handy when I came home ravenous after a Whole Foods to Costco to HEB to Petco errand excursion this afternoon and was able to throw this salad together in less than 10 minutes. Not only is this salad super easy to prepare, it is also delicious and nutritious! It's the perfect make-ahead recipe to take to work or school for lunch. Enjoy!

Ingredients: makes 4 servings
3 cups green cabbage, chopped
1 green bell pepper, sliced thinly
1/2 cup red onion, chopped
1/2 cup shredded carrots
3 Tbsp hemp seeds

For the dressing:
1 clove garlic, minced
juice of 2 limes
1/4 cup water
2 Tbsp Bragg's liquid aminos (or my new favorite, coconut aminos)
4 Tbsp PB2 (or regular peanut butter)
1 tsp ginger
8 drops liquid stevia (or other sweetener of your choice)
Method:
1. Combine cabbage, bell pepper, onion, and shredded carrots in large salad bowl.
2. Prepare dressing: add all dressing ingredients to blender and blend until consistency is smooth. You can also just whisk all the ingredients together by hand if you don't have a blender.
3. Pour dressing over salad ingredients and toss.
4. Top with hemp seeds and enjoy!
