I'm kind of obsessed.
I think part of the reason I love peanut butter so much (other than it just being totally perfect in every way) is that it brings me back to my childhood that was filled with delicious peanut butter and jelly or peanut butter and banana sandwiches. No crust. Cut diagonally.
Why do kids not like crust? Today, if someone cut the crust off of my bread I would actually be upset...
Oh yes, peanut butter on celery was another favorite childhood snack, how could I forget! With M&M's. Oh man, M&M's were my thing....
Did anyone notice that I said "peanut products" earlier? I actually don't eat real peanut butter. I don't even have any at my house! I stick with Protein Plus peanut flour (which is basically ground peanuts with much of the fat removed - it becomes a peanut-buttery consistency when mixed with water) because it is WAY lower in calories (which means I can have MORE!).
I am fond of eating big portions.
Big portions make me feel satisfied and not restricted (like I felt for so long on my weight loss journey when I was doing it the wrong way). You can read more about my weight loss journey on my Insta!
I'd much rather consume half a cup of peanut-flour-mixed-with-water peanut butter than a puny 2 tablespoons of regular peanut butter. Who does that anyway - just 2 tablespoons of peanut butter. Blasphemy if you ask me!
I don't think I've ever only had 2 tablespoons of peanut butter in my life!
Ok so this peanut sauce... you are going to LOVE it. It's the perfect combination of peanutty, salty, sweet, and spicy flavors. Savory, sweet, and just pure amazingness!
This scrumptious sauce is:
Healthy
Vegan
Gluten-free
Sugar-free
Low-carb
& Totally delicious
Oh yes, it's also SO easy to make. Just whisk all ingredients together in a bowl. Or, if you're storing it for later, you can just mix it all up in whatever container you plan to store it in! One less dish is always a plus.
One last thing... you can turn this from a thick sauce into a thinner salad dressing by adding more water.

Is the ginger in the recipe ground (spice) or grated fresh?
Annie
Hi Carolyn! It is the ground spice 🙂
