Preheat oven to 350F, line cookie sheet with parchment paper or spray with non-stick cooking spray, and set aside.
Combine all ingredients except raisins in high-speed blender, and blend until smooth.**
Transfer blended batter to mixing bowl, add raisins, and stir.
Scoop 1.5-2 Tbsp of batter onto baking sheet, flatten with the palm of your hand, and bake for 10 minutes.

*Or other granulated sweetener of choice, equivalent to 1 cup of sugar**Alternatively, combine all ingredients in mixing bowl, and mix until thoroughly combined - this will yield a cooke that has full oat pieces in it unlike what is pictured - still delicious, though! Then, skip to step 4.
