These healthy, Keto St. Patrick's Day Sugar Cookies are the perfect, festive treat! They're also vegan, dairy-free, low-carb, paleo, gluten-free, and sugar-free.
If you are not using cookie cutters, preheat oven to 350F. If you are using cookie cutters, proceed to step 2.
Combine cookie ingredients in medium mixing bowl. Refrigerate for 30 minutes if using a cookie cutter. Once dough has been refrigerated for 30 minutes, preheat oven to 350F.
Scoop dough into tablespoon-sized balls onto parchment paper and then press/flatten into desired shape (or use a cookie cutter).
Bake for 8 minutes or until edges are golden brown.
While cookies are baking, make the frosting. Combine all frosting ingredients in blender, and blend until smooth.
When cookies have cooled, frost them, and enjoy! For a more solid frosting, refrigerate for 30 minutes.
