This Keto Vegan Single-Serving Chocolate Cake is SO delicious! It's jam-packed with fiber and protein, low-carb, sugar-free, paleo, and gluten-free. Perfect for those moments when you need chocolate cake NOW!
Preheat oven to 350F, spray oven-safe bowl/mug/ramekin with non-stick cooking spray, and set aside.
Combine all ingredients in small mixing bowl, and mix until thoroughly combined. I used 7 Tbsp water, but recommend starting with 4 Tbsp and adding water one Tbsp at a time until a thick batter is reached.
Transfer mixture to prepared bowl/mug/ramekin, and bake for 15-20 minutes, depending on how gooey you want the center (I like a gooey center and did 15 minutes!)
Microwave Method:
Spray microwave-safe bowl/mug/ramekin with non-stick cooking spray, and set aside.

Microwave on high for 1 minute. Then, microwave on 50% power in 30 second increments until your desired consistency is reached. (I did 1 minute and 30 seconds on 50% power and the middle was a tad gooey - just how I like it!)
