This Single Serving Pumpkin Spice Cake is AMAZING! Ready in 3 minutes and totally healthy. It’s vegan, gluten-free, keto, low-carb, sugar-free, dairy-free, oil-free, and sugar-free, too!
Combine all ingredients in microwave-safe bowl/mug/ramekin, and mix until thoroughly combined.**
Microwave on high for 1 minute. Then, microwave on 50% power in 30 second increments until your desired consistency is reached. (I did 1 minute and 30 seconds on 50% power and the middle was a tad gooey - just how I like it!)
Oven Method:
Preheat oven to 350F.
Combine all ingredients in microwave-safe bowl/mug/ramekin, and mix until thoroughly combined.**
Transfer mixture to prepared bowl/mug/ramekin, and bake for 25-30 minutes, depending on how gooey you want the center (I like a gooey center and did 25 minutes).
Notes
*Or other granulated sweetener of choice**I used 1/2 cup water, but recommend starting with 6 Tbsp and adding water one Tbsp at a time until a thick batter is reached.
