This Single Serving Pumpkin Spice Cake is AMAZING! Ready in 3 minutes and totally healthy. It's vegan, gluten-free, keto, low-carb, sugar-free, dairy-free, oil-free, and sugar-free, too!
Usually I will make a recipe and then need to make it one or two more times to make sure it's perfect it before posting.
Once it's perfect, I post and then move on with my life.
Moving on with my life is pretty much the opposite of what has happened with this Single Serving Pumpkin Spice Cake.
Since the first time I made it (it was actually already perfect!), I have had it every single day... sometimes twice a day.
I am kind of obsessed. Cakes made in the microwave are my thing these days.
I'm still blown away every time at how amazing it is that a CAKE can be made in the MICROWAVE in less than 5 minutes. How crazy is that?!?!
Y'all also know that I LOVE pumpkin. So it is kind of a deadly combination for me - HEALTHY cake that can be made in the MICROWAVE in less than 3 MINUTES that is pumpkin-spice-flavored.
OMG. This scenario is my version of heaven on Earth.
So yes, I also referred to this cake as "healthy" because it totally is.
It contains healthy fats, protein, and fiber to keep you full, yet it's perfectly sweetened and tastes like a sinful treat!
The best of both worlds.
I seriously love healthy desserts. Those are the only kind of desserts I'll eat now.
I just can't imagine actually enjoying a sugar and calorie-laden brownie, for example, knowing that my all-time favorite brownies are about a million times healthier and taste just as good!!
And they're only 59 calories...!
So anyway, y'all will love this healthy amazing, delicious, perfect, beautiful Single Serving Pumpkin Spice Cake!! And I can't wait to hear all about it. 😀

Microwave cakes are the BEST! Like you said it kind of is astonishing how good they can be for how quick and easy they are to throw together. Anything pumpkin this time of year is a must, this cute little cake looks amazing!
Isn't it amazing how easy they are?! I can't believe I'm so late to the single serving microwave cake game haha ????
Is it possible to make a bigger batch of this, put this in a crust, and bake it as a full pie instead of as a single serve one?
Hi Kristina! I have never tried so I don't know for sure. BUT I do have a yummy pumpkin pie recipe here: https://www.vegannie.com/recipes/low-fat-pumpkin-pie-gluten-free-sugar-free-low-carb
Happy Thanksgiving!!
Annie
Can you make it in a news you oven
You can make it in a regular oven too - I think that's what you're asking! ?
Can you substitute the oat fiber in your recipes for psyllium husk powder?
Hi Whitney! I've never tried that, so I'm not sure. My first thought is that it might make it a little gummy. I would add more coconut flour instead or just use less water ?
