This Thai Peanut Tofu Sandwich is totally delicious! It's vegan, gluten-free, keto, low-carb, dairy-free, oil-free & and vegetarian. Also super easy to make & packed with fiber and protein.
2buns of choice (gluten-free buns if GF or lettuce wraps for keto/low-carb)
toppings of choice (shredded carrots, lettuce, sprouts, and/or any other toppings that sound good to you)
Instructions
Drain tofu: remove tofu from package, and wrap the block of tofu in paper towels. Gently squeeze out excess moisture, and set aside for about 10 minutes to allow it to continue draining.
Once drained, cut tofu into two equal-sized square pieces.
Spray frying pan with non-stick cooking spray and heat on medium-high heat.
Add tofu and season with salt and pepper (a few dashes of each).
Fry tofu for 5 minutes, flip, spice again, and fry the other side for another 5 minutes or until tofu is golden brown and slightly charred in some places.
