4ouncesuncooked noodles(of your choice/gluten-free/paleo friendly if desired, I used regular 'ole spaghetti noodles)
salt and pepperto taste

Instructions
Add 1 Tbsp water, garlic, and green onions to stockpot and heat on medium heat for 3 minutes. Stir frequently. Add more water if necessary to prevent sticking.
Add in vegetable broth and water, and bring to a boil.
Add in bok choy and ginger, and cook for 8 minutes. Stir occasionally.
Add in noodles, and cook for 5-10 minutes, or until noodles are softened to your liking/according to package instructions.
Taste, and add salt, pepper, and additional if desired.
