Here is another super simple beet recipe. I wasn't joking when I told you that I was on a beet kick recently!! I have also been finding joy in a minimalist approach to all aspects of life, including food. I have been slowing down on my dessert recipes and really focusing on whole, nourishing foods - and it feels amazing! Recipes such as this one with only 2 ingredients are so pure and satisfying (also very easy to clean up, which is an added bonus!). Ingredients:Â makes 2 servings
4 medium beets
sprinkle of sea salt
non-stick cooking spray

Method:
1. Preheat oven to 375F and spray baking sheet with non-stick cooking spray.
2. Chop beets into french fry shapes (1/4 inch to 1/2 inch slices), and place on baking sheet.
3. Sprinkle beets with sea salt.

OK, maybe I heard this was doable ... but since just buying organic beets yesterday ... seeing beet fries while surfing ... WHOA this turns out to be the most awesome FAST and extremely satisfying potato alternative. Really, only crazy if you don't try it!
