I decided to experiment with the addition of pumpkin, and they turned out to be even better than the original batch!
At $0.26 for two bars, these delicious pumpkin spice granola bars are less expensive than anything you can get at the grocery store!
They are so easy to make and perfect for a grab-and-go snack or breakfast on the run.

Equipment you'll need: mixing bowl, bread pan
1 cup gluten-free quick oats
1/4 cup pumpkin puree
1 Tbsp agave
1 Tbsp almond milk
1 tsp vanilla extract
1/2 tsp pumpkin spice
8 drops Lakanto Liquid Monkfruit Sweetener* (use discount code "Annie" for 20% off!) *Or sweetener of choice equivalent to 2 tsp sugar
1. Combine all ingredients together in a mixing bowl. Stir until everything is well-mixed.
2. Preheat oven to 325° F.
3. Spray a bread pan with non-stick cooking spray, and pack mixture tightly into pan.
4. Bake for 18-20 minutes, or until firm.
5. Let cool for at least 10 minutes before cutting.
