This nutrient-dense, colorful salad in creamy Dijon dressing is not only beautiful to look at, but also wonderfully tasty! It was shared with me a few months ago by my mom's good friend, Shelly, and has become a staple in my diet ever since. One serving of this salad, with only 104 calories, contains over 100% of your daily Vitamin C requirements and 72% of your daily Vitamin A requirements! It is also rich in fiber, which keeps you satiated and can help lower cholesterol.
Ingredients:
4 cups romaine lettuce, chopped
15 grape tomatoes, halved
1 can whole kernel corn (non-GMO)
1 orange bell pepper, diced
1/2 can garbanzo beans
salt and pepper, to taste

1. Combine salad ingredients in salad bowl.
