Moving on with my life is pretty much the opposite of what has happened with this pumpkin spice cake.
Since the first time I made it (it was actually already perfect!), I have had it every single day... sometimes twice a day.
I am kind of obsessed.
Cakes made in the microwave are my thing these days.
I'm still blown away every time at how amazing it is that a CAKE can be made in the MICROWAVE in less than 5 minutes.
How crazy is that?!?!
Y'all also know that I LOVE pumpkin. So it is kind of a deadly combination for me - HEALTHY cake that can be made in the MICROWAVE in less than 3 MINUTES that is pumpkin-spice-flavored. OMG.
This scenario is my version of heaven on Earth.
So yes, I also referred to this cake as "healthy" because it totally is. It contains healthy fats, protein, and fiber to keep you full, yet it's perfectly sweetened and tastes like a sinful treat!
The best of both worlds.
I seriously love healthy desserts. Those are the only kind of desserts I'll eat now.
I just can't imagine actually enjoying a sugar and calorie-laden brownie, for example, knowing that my all-time favorite brownies are about a million times healthier and taste just as good!! And they're only 59 calories...!

Equipment you'll need: microwave-safe and/or oven-safe bowl, mug, or ramekin
2 Tbsp protein powder (13g)
2 Tbsp coconut flour
1 Tbsp oat fiber
2 Tbsp Lakanto granulated sweetener* (use discount code "Annie" for 20% off!)
3 Tbsp pumpkin pureé
2 dashes tsp salt
3/4 tsp stevia extract powder
1/2 tsp baking powder
2 dashes cinnamon or pumpkin pie spice
1/2 cup water (start with 6 Tbsp)
*Or other granulated sweetener of choice
1. Combine all ingredients in microwave-safe bowl/mug/ramekin, and mix until thoroughly combined.
*Note: I used 1/2 cup water, but recommend starting with 6 Tbsp and adding water one Tbsp at a time until a thick batter is reached.
2. Microwave on high for 1 minute. Then, microwave on 50% power in 30 second increments until your desired consistency is reached. (I did 1 minute and 30 seconds on 50% power and the middle was a tad gooey - just how I like it!)
Oven Method:
1. Preheat oven to 350F.
2. Combine all ingredients in microwave-safe bowl/mug/ramekin, and mix until thoroughly combined.
*Note: I used 1/2 cup water, but recommend starting with 6 Tbsp and adding water one Tbsp at a time until a thick batter is reached.
3. Transfer mixture to prepared bowl/mug/ramekin, and bake for 25-30 minutes, depending on how gooey you want the center (I like a gooey center and did 25 minutes).
