Equipment you'll need: large mixing bowl, mini muffin tin
1 can (15 oz) kidney beans, drained and rinsed
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp Italian seasoning (or oregano!)
1 Tbsp chili powder
3 Tbsp ketchup
2 Tbsp mustard
1 Tbsp Worcestershire sauce
1 cup mixed vegetables (thawed, if using frozen)
6 Tbsp instant oats
1. Preheat oven to 350F and line muffin tin with liners or spray with non-stick spray.
2. Mash beans with a fork or potato masher in large mixing bowl.
3. Add all ingredients except oats, and stir.
4. Add oats, and stir some more.
5. Spoon into muffin tin.
6. Bake for 20 minutes.
